Ingredients
- 1 Tin Tuna MSC certified, spring water, drained
- 1 Spring onion
- 2 Tbsp Mayonnaise
- 4 Tbsp Sweetcorn Canned or defrosted
- ¼ Pepper Any colour or mixture
- 100 g Pasta Any type, cooked and cooled
Instructions
- Rinse the spring onion and pepper under the tap
- Open the tinned tuna and add into the sieve, straining the water on its own
- Dice the pepper into small pieces and add to the mixing bowl
- Remove the outside layer of the spring onion, top and tail the ends and slice thinly
- Add the pasta, spring onion and sweetcorn to the mixing bowl
- Add the drained tuna to the mixing bowl and give all the ingredients a mix with the spoon
- Add 2 tbsp of mayonnaise and mix everything together again
Top tips
- Make sure the pasta is fully cool before mixing it in
- Use wholemeal pasta for more fibre or pea, chickpea or lentil for more protein
- Add spare veg left over from other recipes like olives from Easy Veggie Pizza or cooked mushrooms from Vegetable Couscous
- Add 4 tbsp of peas for some extra crunch and sweetness
