Equipment
- Baking Tray
- Chopping board
- Sharp knife
- Tablespoon (tbsp)
- Parchment paper / tin foil Enough to cover baking tray
- Grater
- Tea towel / oven glove
Ingredients
- 1 Bagel
- 2 Tbsp Tomato puree
- ⅛ Pepper Any colour
- 2 Mushrooms
- 1 Pinch Mixed herbs
- 30 g Mild cheddar cheese Thumb-sized
- 5 Olives
Instructions
- Preheat the oven to 180°C
- Rinse the mushrooms and peppers under the tap
- Dice the pepper and mushrooms into small 1cm pieces and leave to one side
- Slice the olives sideways and add to the pepper and mushrooms
- Using a serrated knife, slide the bagel through the middle so you have equal sized pizza bases
- Cover the baking tray with parchment paper / tin foil and place both bagels on top
- Add 1 tbsp of tomato puree to each bagel. Use the back of the tablespoon to generously spread over the bread
- Grate the cheese on the chopping board making sure you get all the loose cheese inside of the grater
- Add the grated cheese to the bagel on top of the tomato puree
- Divide the chopped pepper, mushrooms and olives into two piles and a pile to a bagel slice
- Sprinkle on the mixed herbs with finger and thumb
- Place in the oven for 15 minutes until the cheese has melted
- Using a tea towel / oven glove, remove the baking tray and let cool for 5 minutes
Top Tips
- Use other cheeses like fresh mozzarella, ricotta or mascarpone for lighter option
- Swap bagels for tortilla wraps, half of a soft roll or pitta bread
- Use other soft vegetables (courgettes, sweetcorn, etc) for preferred tastes
- Use tomato puree with garlic or herbs in for different flavours
