Pitta Bread Pizzas

- Parchment paper / tin foil Enough to cover baking tray

Ingredients
- 2 Wholemeal pitta breads
- 2 Tbsp Tomato puree
- ⅛ Onion
- ¼ Pepper Any colour
- 2 Mushrooms
- 1 Pinch Mixed herbs
- 30 g Mild cheddar cheese
Instructions
- Preheat the oven to 180°C
- Chop the onion, pepper and mushrooms into small 1cm pieces and leave to one side
- Cover the baking tray with parchment paper/tin foil and place the wholemeal pitta breads on top. Using 1 tbps of tomato puree for each bread, generously cover and use the back of the spoon to spread over
- If needed, grate the cheese then add on top of the tomato puree. Add the chopped vegetables and sprinkle on the mixed herbs
- Place in the oven for 15 minutes until the cheese has started to brown in colour. If by 15 minutes the pizzas are still not fully cooked leave in the oven and check every 5 minutes
Notes
Top Tips
- Use other cheeses like fresh mozzarella, ricotta or mascarpone for lighter option
- Swap pitta breads for tortilla wraps or half of a soft roll
- Use other soft vegetables (courgettes, sweetcorn, etc) for preferred tastes
- Use tomato puree with garlic or herbs in for different flavours
