Overnight Bread

You’ll need:

  • 250g wholemeal flour
  • 250g white flour
  • 20g plain flour for dusting
  • 6g salt
  • 10g dried yeast
  • 400ml water
  • 2tbsp oil


You’ll need:

  • Food scales
  • Mixing bowl
  • Spatula
  • Measuring jug
  • Casserole dish (with lid)
  • Cling film
  • Oven gloves/tea towel
  • Sharp knife



  1. Add the wholemeal and plain flour into the mixing bowl
  2. Add the salt and yeast
  3. Use the spatula and mix everything together
  4. Slowly pour in the water until everything is mixed together. All the water might not be needed
  5. Wrap the mixing bowl with cling film (or plastic bag) and leave
  6. Put the oven on 220°C and create a space in the middle of the oven for the casserole dish to go
  7. Pour the oil into the casserole dish. Use two fingers to spread the oil around and then put in oven
  8. Sprinkle a handful of flour onto the kitchen side. Remove the cling film and use the spatula to get bread onto side
  9. Shape the bread into a circular shape
  10. Remove the casserole dish with oven gloves and place the bread in in the middle
  11. Lightly score the bread with a cross
  12. Leave in the oven for 30 minutes with the lid on. After that, remove the lid and cook for another 10 minutes
  13. After 30 minutes in the oven, turn the oven off and leave until the bread cools. Leave the oven door slight open
