Veggie Couscous

2 serving (100 grams)

You’ll need:

  • 100g couscous
  • Boiling water
  • ½ low salt vegetable stock cube
  • ⅛ small red onion
  • ½ grated carrot
  • ⅛ small pepper
  • Handful of parsley


You’ll need:

  • Mixing bowl
  • Food scales
  • Fork
  • Kettle
  • Sharp knife
  • Chopping board



  1. Put the kettle on
  2. Measure the couscous using the food scales. Place couscous into serving bowl.
  3. Crush stock cube and add to the mixing bowl along with a pinch of pepper.
  4. Wash and dry the pepper and peel the onion. Using a sharp knife on the chopping board, dice the onion and pepper into very small cubes. Add to the mixing bowl.
  5. Grate the carrot and add into the mixing bowl.
  6. Chop up the parsley and add to the couscous. Mix everything together so it is evenly spread.
  7. Pour boiling water over the couscous until the water just covers the mixture. Give the mixture a stir and make sure everything is in the water. Be careful not to place too much water in otherwise it will be too wet. Place the chopping board on top of the serving bowl. Leave for 10 minutes.
  8. After 10 minutes, take the chopping board off and taste the couscous. If it is still hard, place the chopping board back on top and repeat every 2 minutes until its soft.
  9. When happy with the result, fluff up the couscous with a fork.

  • Use other vegetables like tomatoes or spinach.
  • Add fruits to make the couscous sweeter like pomegranate, chopped orange or apple.
  • Give the couscous some crunch by adding pumpkin or sunflower seeds
  • Squeeze some lemon and grate the zest in for a sharp taste
