Cheese & Onion Frittata

Ingredients

You’ll need:

  • 2 free range eggs
  • 1/8 onion
  • 2cm block cheese
  • Splash of milk (diary, oat, soya)
  • Pinch pepper
  • Oil spray

Equipment

You’ll need:

  • Measuring jug
  • Fork
  • Chopping board
  • Knife
  • Muffin tin/4 muffin cases
  • Grater

Instructions

Method:

  1. Preheat the oven on 160
  2. Break the eggs and put into measuring jug
  3. Finely dice the onion into small chunks and put into measuring jug
  4. Using the grater, finely grate the cheese and separate into two parts. Add one part into the measuring jug
  5. Add the pepper to the measuring jug. Add the milk and mix everything together with the fork
  6. Spray the oil into 4 muffin cases/tin and using finger rub oil all around
  7. Pour the mixture into each case so each is 3/4 full
  8. Place in the oven and cook for 15 minutes or until mixture has come away from the sides
  9. Add remaining cheese on top of each frittata and cook for another 5 minutes until cheese has melted
  10. Take out the oven and let cool down

TOP TIPS

  • Instead of cheese, use other vegetables like spinach, tomatoes or peppers
  • Add herbs and spices for different flavours
  • Use a little smoked salmon, chicken or bacon.
