Bruschetta

Ingredients

You’ll need:

  • 2 medium tomatoes
  • 1/2 spring onion
  • 1 garlic clove
  • 7 basil leaves (leaving 2 for garnish)
  • 1 soft roll
  • 1 tbsp olive oil
  • Pinch of salt and pepper

  • Spoon
  • Knife
  • Plate
  • Bowl
  • Chopping board

Instructions

Method:

  1. Slice the tomatoes in half. Continue to dice the tomatoes into small cubes, roughly 5mm. Add to the bowl
  2. Press the garlic clove with your palm. Remove the skin and finely chop. Add to the bowl
  3. Top the spring onion then slice longways so you have four quarters
  4. Line up spring onions and slice finely. Add a small handful into the bowl
  5. Tear basil leaves and add to the bowl
  6. Add salt, olive oil and pepper to the bowl and use the spoon to mix everything together
  7. Cut the roll into halves. Put on the plate
  8. Spoon the tomato mixture onto the roll halves
  9. Garnish with one full basil leaf on each half

TOP TIPS

  • Add capers or chopped olives to give the bruschetta a tangy flavour
  • Grill the roll before for a nice crunch
  • Use ham or cheese for different flavour. If adding, no need to add salt
  • Put some chilli into the tomato mixture for a bit of spice
