Vegetable Couscous

  • Mixing Bowl
  • Food scales
  • Fork
  • Kettle
  • Sharp knife
  • Chopping board
  • Teaspoon
  • Tablespoon
  • Towel


  • 100 g Couscous
  • 200 ml Water
  • 1 Tsp Stock powder
  • Onion
  • ¼ Pepper Any colour
  • ¼ Courgette
  • 1 Tbsp Olive oil
  • 1 Handful Chopped parsley
  • 1 Tsp Smoked paprika
  • 1 Pinch Pepper


  • Add the water to the kettle and boil
  • Measure the couscous using the food scales. Place couscous in the mixing bowl along with the stock powder and pepper
  • Wash the vegetables and dry thoroughly using the towel
  • Using the bridge method, chop the onion in half and peel the first layer. Use the claw method and slice into thin strips going downwards from roots to tip. Add to the mixing bowl
  • Using the bridge method, chop the pepper. Deseed and place on the chopping board inside facing down. Use the bridge method to chop in half again. Turn the quarter upside side and press down with palm. Use the claw method and slice into thin strips then across to dice the pepper
  • Use the claw method to stabilise the courgette. Chop half centimetre rings. Stack 3 or 4 up and using the claw method and slice into strips then across to dice the courgette. Repeat this until all courgette has been diced
  • Add all of the vegetables to the mixing bowl and add the boiling water. Cover the mixing bowl with the empty chopping board
  • Once the couscous has absorbed all of the water (around 10 minutes) remove the chopping board and fluff with the fork
  • Add the smoked paprika, olive oil and parsley and mix again



Top Tips

  • Use other vegetables like tomatoes or spinach
  • Add fruits  (like pomegranate, chopped orange or apple) to make the couscous after to make the dish sweeter
  • Give the couscous some crunch by adding pumpkin or sunflower seeds
  • Squeeze some lemon and grate the zest in for a sharp taste
  • Replace the stock powder with a low salt crushed stock cube
